To follow up here in case anyone else is looking for an answer to this. For projects that I have managed we typically invest in a Synology Disk Drive system with four or more drives in it.

We then use a raid 6 or synology hybrid setup such that the system is safe if two discs crash you don't lose any of your data. I bought a ~$100 APC UPS to mitigate against quick power outages that are becoming more common.
Our general strategy is to use an inexpensive control computer, get the data off of the computer that controls the telescope, store it in the cloud, bring it down to a local network attached storage device and then keep things there. You can purchase expansion products if you ever run out of space or you can just buy another unit if you need. If you think your needs will grow as a function of time, I would buy a 8 bay or larger drive system and put the number of hard drives you think you need and add hard drives as you need.
