Yes you could image for a while, then image a second target way on the west, then come back to the original target and image more. But you are guessing unless you know what hour angle is the point at chich your mount flips (the second question?). If you know that for sure, you can tell ACP what it is and then it will manage the flipping for you. If you don't know where it flips your workaround might not work because you don't know when to slew west the n come back because you don't know if the mount will stay on the west side or flip back over. There's really no way to manage flips unless you can determine at what hour angle the flips occur. And remember it only flips when slewing never when tracking.
